We are having friends come to town for a visit this weekend and I’ve been trying to figure out an easy but crowd-pleasing dinner plan for the night everyone arrives. With four guests, one of whom is a vegetarian, I was thrilled to have an epiphany this morning: make-your-own-pizza night!
Luckily, my hubby, DA, is a master pizza dough-maker (we use a tried and true Wolfgang Puck recipe that is flawless every time. Except for that time we tried to substitute whole wheat flour and ended up with brown hockey pucks. Lesson learned!). And a few months ago we bought a pizza peel, pizza stone and pizza cutter from Pizzacraft, which makes having a pizza party so easy and so fun!
We usually buy and prepare loads of toppings: pepperoni; grilled onions, mushrooms, and peppers; grilled chicken; homemade pizza sauce (1 can of tomato sauce; 1 small can (6 oz.) of tomato paste; 1 Tbsp. dried oregano; and a couple of cloves of garlic, minced. Mix together and voila!); shredded cheese; black olives; fresh Parmesan; and red chili pepper flakes. With all the fixin’s out, we let our guests go nuts creating their own delicious pizza. A quick tip: put a little cornmeal under your dough on the pizza peel and the transfer from peel to stone is a breeze.
With a big green salad, this meal never fails to make everyone happy! And as the host, I love having an easy to prepare meal in my repertoire!
