Chinese-born Joyce Chen and her husband left Shanghai in 1949 to move to the US where she opened her first restaurant in Cambridge, Massachusetts, in 1958. Her tiny take-out shop introduced Americans to authentic Chinese cuisine and soon became wildly popular. She went on to open two more restaurants, become the star of her own cooking show and create her own line of cookware.
